Best muffin recipe?

What is your tried and true recipe for a muffin. Any muffin. I'm going to bake a few batches and freeze them I f'd up a batch of zucchinni muffins but another turned out great.

    This is just a single serving microwave muffin, but I'm sure it could be modified for a larger batch in the oven. I swapped out the egg whites for one whole egg and used one tablespoon each of almond flour and coconut flour. I was really craving something sweet last night and I made this (for the umpteenth time!) and let a couple squares of Green and Black's 85% chocolate melt over it, then poured just a little heavy cream over the top. It really hit that spot - especially with half a cup of raw milk :wink:

    I also modified it for my kids' breakfast this morning. I replaced the pumpkin with very ripe banana and didn't add the cocoa (might use it tomorrow) and rather than stevia, I used a bit of 100% maple syrup, and topped off the finished muffin with heavy cream. It tasted like a banana bread pudding. My kids couldn't get over how good it was, and have requested it for breakfast tomorrow! Score! :happy:

    I actually used half almond flour/half coconut flour as I didn't want to overpower it with coconut, but I think it would have been fine. (plus coconut flour is more expensive!)
