  • Sounds disgusting but I made this smoothie for breakfast and I am so full!

    1 beet, chopped
2 large apples w/ skin, chopped
    2 cups unsweetened applesauce
    ½ green pepper, chopped
    ½ cup green lettuce, chopped
    ½ cup skim milk
4 tsp powdered sugar (or other sweetener like Truvia)
    sprinkle of lemon juice

    Yields about 7 cups blended
    78 cals per serving

I had five cups today, haha! If I made it again I might put in just half a beet and add a banana so I don't have to sweeten it as much.

Eat clean balsalmic pork chops with grilled nectarines (from eat clean magazine) was a huge hit with my whole family and was very easy to prepare. I served them with quinoa and broccoli. It was a really healthy, but great tasting meal. Even my youngest, who normally groans when quinoa is on the menu had a clean plate! I substituted peaches for the nectarines because that is what I had on hand:

Balsamic Pork Chops with Grilled Nectarines
    Prep: 10 minutes
    Cook: 5 minutes
    Yield: 4 servings
    Ingredients
    1/4 cup balsamic vinegar
    1/4 cup olive oil
    2 tablespoons honey
    2 teaspoons chopped fresh rosemary
2 pounds thinly sliced boneless pork loin chops
    1 Cooking spray
    3 nectarines, halved and pitted
    1 Fresh rosemary
    Preparation
    1. Whisk together first 4 ingredients in a small bowl. Place pork in a large zip-top plastic bag and pour balsamic marinade over pork. Marinate for 1 hour, turing occasionally.

    2. Grill pork on medium-high heat on a lightly greased grill rack or grill pan 1 to 2 minutes on each side or until desired. degree of doneness. Grill nectarines 1 minute on each side or until nice grill marks appear. Garnish with fresh rosemary, if desired.

The other one my whole family loves (also from Eat Clean magazine) is their southwest turkey meatball skillet supper.
