This recipe exists as the result of a botched bean salad. Now it's one of my favorite meals. Not only low calorie and tasty, they also only cost about 17 cents each!
1 cup dry lentils
2 cups water
1/4 cup minced onion
1/2 cup bread crumbs
1/4 cup oatmeal
1/4 cup grated parmesan cheese
1 egg
Bring lentils, water and onion to a boil along with preferred seasoning (I use a generous scoop of minced garlic, salt, cracked black pepper & cumin). Reduce heat and cover. Cook until lentils are soft, adding more water if necessary. Mash and cool. Add remaining ingredients, and form into 8 balls. Flatten into patties on wax paper, and cook 3 - 5 minutes per side in a non-stick skillet. Try to flip only once - they may fall apart if not well seared. These freeze well, and can be re-heated in skillet or microwave.
