Enough calories

Okay, I'm measuring BG, watching carbs, balancing carbs with protein and fats, and now I'm having trouble making my calories again. Heck, I'm not even getting to the MFP minimum of 1200 on workdays -- before exercise.
I can't drink Ensure or eat most of the supplement bars I've seen because they all seem to contain corn, soy, or something else on my (tested) allergies/sensitivities no-no list. Anybody have ideas for snacks that will help with calories without throwing off carbs.

Have you looked into making your own protein shakes? I know there are whey proteins out there that are low carb (don't know whether they might contain the things your allergic to though) and then you can add low-fat milk, low-GI fruits like berries, spinach, etc. Sometimes I just slice up some avocado and eat it too. Lots of calories and good for you fats.

Like I said in my status earlier, not eating enough yesterday really kicked my butt today so if I think of any other high-cal, low carb things, I'll let you know.

Nut butter and avocados are often where I pick up extra cals when I'm short. Cheese too. I worry less about fat than carbs.

Avacados, nut butters and cheese -- I may have just gone to heaven,
  • I'm struggling as well Judi, I don't seem to eating enough either- I'm battling on till I see my diabetic educator in October but I am still managing to loose weight...

    Hope it improves for you..

My favorite is plain greek yogurt and I add some Polena or Smuckers sugar-free jam. Great snack or even dessert.
