Cauliflower Pizza Bites--Amazing!

So I've had this one pinned for awhile and finally made it today. So good! I made half a batch because I underestimated how much the cauli would shrink up when it cooked.

My changes~For a half batch I used just over 1 cup cooked, riced cauli, 1/2 cup cottage cheese, 1 egg white, 1-2 tsp Italian seasoning, 1/2 tsp garlic powder, black pepper,red pepper flakes, and 1-2 Tbsp grated Parmesan. Instead of the muffin tins, which she said were hard to clean, I used a cookie sheet with parchment paper, and scooped them out with cookie scoop, then shaped and flattened out a bit with a spoon. I sauteed some mushrooms up and put a layer of those on, then some finely shredded mozzarella, then 1 pepperoni on each one. Cooked at 450* F for about 15 minutes and let rest for a good 10 before I ate. Dipped into tomato sauce that I'd added garlic powder, celery salt, italian seasoning, and red pepper flakes to along with a pack or two of Truvia. Delicious!
