Cauliflower "Rice"

Perhaps this is obvious to most of you. But I just discovered it tonight, and thought I'd share.
I was making chicken breast with butter in a large skillet. I had already prepared a nice salad. And this is when I'd typically make some rice or quinoa to go with it. But I recalled I had some cauliflower in the fridge. So I steamed the cauliflower, then sliced and diced it into small pieces, similar in size to rice (although slightly bigger). I then added salt and a lot of pepper.
Once the chicken finished, I put the diced cauliflower into the skilled, added a bit more butter, and turned the heat on high. I also added some blue cheese, cut into small pieces so it would melt faster. I left it on high heat until the cheese melted, which took about 5 minutes. I then served it as a "rice" with my chicken, scooping up a bit of the cauliflower to go with each bite of the chicken.
It was absolutely fantastic. Easy to make, healthy, and oh so tasty. It complemented the chicken perfectly.

Hubby is Asian, and he makes the best fried rice! I was skeptical of the cauliflower "rice" at first, but I got him to make his fried "rice" using cauliflower, and it was AMAZING!! We've had it 4-5 times now in the span of about a month.0

I made cauliflower pizza crust for the first time two nights ago. I could NOT tell the difference. All I could taste was my yummy homemade pizza sauce, cheesy goodness, and veggies. I love pizza, so I am so glad this worked out for me. You should try it if you haven't already.

there's a recipe on PaleOMG.com for ropa viega with cuban "rice". you cut up the cauliflower head and then put it through the grating blade on a food processor and it literally rices it. I used my salad shooter. Anyhow, look up that recipe it was tasty. This weekend my son is making a shrimp and mushroom "risotto" using the cauliflower the same way.0

We love cauliflower rice! I prefer to steam if after I rice it, pour in a strainer and add a little salt and drain to get the excess moisture out. Then I stir fry it. Seems a little "ricier" to me.0

Delish! I love anything with cauliflower. I love buying the purple and orange varieties for a bit of color. We make non-potato cauliflower salad and mashed cauli too. Kids don't even notice the difference. Total win!0

Cut up the cauli and put it in a food processer and pulse it a few times - makes it more even consistantcy
I use cauliflower rice all the time
My favorite is to use it place of cous-cous or cracked wheat and make some faux tabolui
rice cauli (1 head)
chopped kalamata olives (maybe about 15)
chopped cucumbers (1 - cubed)
chopped tomatoes (use grape tomatoes cut in half)
chopped parsley (3/4 of a bunch)
chopped mint (~15 leaves)
chopped green onions (2 bunches - but I really like onion - you could also use chopped red onion)
mix all together and add equal parts fresh squeezed lemon juice and EVOO (I usually squeeze 2 lemons and add equal amount of EVOO)
season with a little salt.
Best to let it sit in the fridge for 2 hours to let the flavors meld...0 -
