Zucchini/Summer Squash photo

I was in the midst of prepping dinner tonight and thought about having some zucchini and summer squash to go with my steak tips....
So, I yanked out my spiral slicer and sliced up a PERFECT 12oz portion.
Per Calorieking.com: this is only 60 Calories, 11g of total carbohydrates, 4g fiber, 4g protein, 1g fat, and a WHOPPING 892g of potassium!
This plate is TOTALLY full. I prepped this for tomorrow's lunch with about 1TB of real butter, fresh garlic, sea salt, black pepper. Ill heat it up in the microwave as-is - where this contains its own water source, it will perfectly steam but still retain its 'bite'.
This is super filling for such a low calorie vegetable too, without hurting one's stomach at all!

The only thing you will run into with it is 'what do you do with the core piece left?' - you simply add it to a soup, or munch on it! The only waste you have are the immediate ends you trim off to get started... you lose about 5% normally... the rest is completely usable!!!!
