    I tend to keep to Asian inspired foods - apart from tasting fantastic, a great deal of them are low in purines and really quick to make. Try this

    250g Rice noodles
    1-2 tsp of Garam Masala (indian spices)
    ground nut oil (2-3 tbsp)
    1 large red chilli
    fine stem broccoli
    pak choi
    green beans
    beansprouts
    dash of fish sauce
    dash of light soy sauce
    small pieces of chicken (not necessary, but if you want small amounts of protein ...)

    get a large wok,
    heat up the groundnut oil and put in the chopped chilli and the garam masala.. fry it for a 1-2 mins then add the rice noodles and stir it in.
    pur over some fish sauce and soy sauce.. stir it in.. actually don't stop stirring at all !
    put in the bits of chicken.. stir for 1-2 mins until they're starting to get cooked through then add the veggies.. keep stirring..
    lastly, add the pak choi and beansprouts and stir until the pak-choi is wilted (but still vibrantly green) and still crunchy.. maybe 3-4 minutes.. you may need to add a few tablespoons of water just to stop things from drying out.

    serve immediately.
