desserts

Im going to bookclub friday and the theme is black and white and desserts. Im dreading dealing with the temptation - Im still so new to paleo. I know that be awesome most of the time and splurge here and there but my splurges turn into month long binges!

I want to bring a dessert, something that will be on the safer spectrum for me.

Anyone have a favorite?

    Amazballs-- I haven't worked out a way to use less/other sugar yet, but it's incredible. Highly recommend (you can use coconut oil in the glaze instead of milk too, which does work and is super delicious).

    And editing to add that I *haven't* tried using coconut milk, but I bet that would work too.

    Coffee-Flavored Chocolate Mousse Recipe

    Serves 4
    Ingredients

    1/4 cup dark chocolate chips or 1/4 cup dark chocolate squares;
    1/2 cup coconut milk;
    1 tbsp ground coffee beans;
    1/4 cup boiling water;
    1 tbsp vanilla extract;
    1/4 tsp flavored extract (almond, mint, coffee, etc.);

    Chocolate mousse preparation
    Preparation

    In a medium skillet over a low heat, melt the chocolate. Stir frequently to prevent the chocolate from burning. Add in the coconut milk and whisk together until blended.
    In a small bowl, mix the hot water with the ground coffee beans.
    Combine the melted chocolate, coffee mixture, vanilla extract and flavoured extract.
    Pour the mixture into 4 small dessert dishes, or two larger ones. Espresso cups are the perfect size to make 4 servings.
    Place in the refrigerator for 2 to 3 hours, or even overnight to allow them to become firm. Bon apetit!

    I cannot remember where I found this recipe now but it is AMAZING - these taste like rich dark chocolate... but really...

    Paleo Choc Truffles

    1C Pecan Nuts
    1C Dates
    1/2C Almond Butter
    1-2TBSP Cocoa (depending on your preference

    Using a blender, blend half a cup of pecans until they are a fine-medium crumb and set aside.

    Blend all remaining ingredients and then roll into balls and coat with the pecan crumb. Refrigerate until firm.

    I kid you not, these are YUM

    Chovocado Pudding

    1 ripe avocado
    1/4 cup cocoa powder
    1/4 cup raw agave nectar (honey will work)
    1/4 cup coconut milk (almond milk will work)
    1 teaspoon vanilla extract

    Peel and quarter a ripe avocado. Put all the ingredients in blender or food processor and blend until smooth. Serve and enjoy!

    *This recipe is perfect for two servings.

    I have added half a banana for chocolate banana pudding as well, or try it with a little coarse sea salt on top or with a little orange zest adds a nice flavor.

    I know it sounds weird but its really good, I made some today

    definitely going to have to try some of these.

    I also really like paleo chocolate chip cookies (I don't have the exact recipe on hand... but I'll find it and post it later)

    Paleo Chocolate Chip Cookies (Vegan)
    makes 2 dozen

    adapted from this recipe

    Ingredients:

    2 cups almond meal, or almond flour
    1/4 cup coconut oil, softened (non-vegans can use butter)
    3 Tablespoons pure maple syrup
    1/4 teaspoon sea salt
    1/2 teaspoon baking soda
    2 teaspoons vanilla extract
    1/2 cup dark chocolate chips

    Directions:

    Preheat oven to 350F.

    In a medium bowl, whisk together the almond meal, salt, and baking soda, then add the coconut oil, maple syrup and vanilla extract and mix well.

    Roll into balls. Slightly press down to flatten out on baking sheet.



    *NOTE* - I can not get 2 dozen out of this recipe... perhaps I make them too big... but they are delicious ... you should probably double or triple the recipe :)

    I have decided to try this one - but with raspberries instead of the banana sauce. I will let you know how it turns out.
