Excited for my mom

So I have finally convinced my mom to drop the grains. I have been full on paleo for 4 weeks, thanks to the whole 30 challenge. My mom is overweight, is borderline diabetic, has high cholesterol, and has high blood pressure, and some other medical issues. She has been taking Crestor for her cholesterol but she believes it's a contributing factor to her developing an anti-inflammatory disease called polymyalgia rheumatica, for which she is now taking prednisone. I believe she's also on meds to control her glucose.
She was eating a relatively low carb diet but still eating grains and her sugar levels were high, even while on meds. She has gone paleo along with me for the past 3 weeks. Last night we had dinner here(which consisted of brisket, roasted root veggies, and green beans). She was concerned about the carb/sugar content of the roots(carrots and parsnips). She took her sugar level 90 minutes after she ate and it was 96! 96 is amazing for her. It was actually lower than mine, which was 114 and I don't have blood sugar issues. She couldn't believe it! She's finally excited and on board with the idea of grains being a hindrance to good health. She's also interested to see what her lipid panel will reveal when she goes for blood work in 6 weeks. I hope it will be good news to give her the encouragement to continue with this lifestyle.

Fantastic! I think the results speak for themselves. If only more people would realise what today's food was doing to them.
It certainly doesn't help that so-called medical experts and dieticians encourage everyone to eat more grains.0
