Healthy Pancake Mix

I have a container that I store my "healthy pancake mix" in. I usually double the recipe and keep it on hand.
My pancake mix recipe is a follows: 4 cups of flour (I use 2 c. white and 2 c. whole wheat), 1 cup non-fat dry milk, 3 tbsp of baking powder, 2 tsp baking soda, 1tsp salt, 2tbsp+2tsp of splenda. Mix it well all up and store it in a container.
To make pancakes you put in a bowl, 1 cup mix, 1 egg (or substitute equivalent), 1 cup lowfat milk, 1 tsp olive oil. (I am thinking about adding a tbsp of flaxseed) -Makes about 6-8 pancakes.
If we don't eat them all, I store in the fridge and the kids reheat later (they say freeezing them makes them taste weird. They won't any kind of frozen pancake or waffle from the store--that's a good thing!)
