NET CARBS-ATKINS

Hello All, I am on the Atkins plan and am doing the extended induction. This is going into my 7th week and I have lost a total of 16.4 (in which I gained this past week 0,2). I am not meeting my veggie intake of 12-15 of carbs. I can't seem to get those up. I have the 2003 Atkins book and I have read and re-read the book several times. My weight is going by really slow I think its because I am only eating 7-10 net carbs a day. I remember reading that you should have 2-3 cups of salad veggies and 1 cup of other acceptable veggies if your salad veggie doesn't exceed 2 cups. So my question is how can I increase my veggie intake without going over my 2-3 cups of veggie or 1 cup of other acceptable veggie?
Here's an example:
Breakfast- 3 eggs and 3 pieces of bacon (thick)
Lunch- 10 oz salmon with a 1 cup of spinach - only 2 net carbs
Dinner-Walmart Markside Cobbf Salad- 4 net carbs
Here's an example:

To be honest I think that the induction phase of Atkins is way too restrictive on veggies.
7 weeks on 10g of carbs a day from vegetables is very extreme, I started on 30g carbs and thought that this was radical
Leafy greens are great for you, I would eat them in abundance, to restrict them to two cups does not make sense to me.
Even the starchier veggies could work in moderation.
I would venture that the difference between consuming 10g of carbs a day and 30g, say, is minimal (unless you are particularly sensitive) and the extra may actual help you along and give your body some variety. I don't see a problem with the occasional 50g a day.
Sorry for the lack of veggie advice (aside from eat more, mostly leafy) but that is my take on it ... Regarding weight I would take measurements first then worry about the scale.0 -
The darker the color vegetable the better. Grab some freshly steamed spinach, broccoli, kale, beet-greens, etc...
I would suggest going to http://www.atkins.com/Program/Phase-1/What-You-Can-Eat-in-this-Phase.aspx and re-visit the list of vegetables.
Please take note though - you still need to get in a variety in conjunction with good hydration.
Im going to mirror what Vim suggested and consider upping your healthy-vegetable related carbohydrates but those from what Atkins' plan identifies - they are really a great source of information.
Approximately 4oz of freshly chopped romaine will fill a large dinner plate nicely. Per Calorieking.com: 3.7g of total carbs. Out of that, you have 2.4g of fiber. This yields a small 1.3g of net carbs. Get your rabbit food fix going!!!! 8-)0 -
I could never do 12-15net from veggies when I tried my hardest, so I always did the best I could (and since I'm starting induction again, I'm trying the best I can now). I like doing scrambles in the morning with some zucchini, bell peppers or broccoli scrambled into my eggs, and then I personally would eat less of the meat at lunch and work some more veggies in (again, maybe broccoli since it has a good carb count but is really filling).0
