Today, I'm trying for the first time a Bolognese recipe and will serve it over spaghetti squash..

What dish do you especially love to make, I'd love some new recipe ideas. Please share :smile:

    I am all pumped up to try my Halloween 'baking' idea, so it would be mushroom caps stuffed with ground turkey in some Asian style sauce, and topped with either olive/pimento or fresh mozza ball with a touch of pepper-garlic sauce to make a scary 'eyeball'

    My all-time favorite is home-made marinara with shrimps or dehydrated sweet potato chips with eggplant caviar (or fresh salsa) for a dip.

    EDIT: that's for pot-lucks that is. not a meal. For a meal, I am actually making my favorite dish tonight: whole sockeye salmon baked in paper and broiled a touch afterwards to crisp up the skin. OMG. I am in heaven.

    I just happened to be reading the newsletter from my CSA with this recipe. Can't wait to try it. It's cheesy, so Primal, not Paleo. I will double the recipe to get 12 muffins.

    Parmesan Kale & Spinach Cakes
    1 bunch kale
    1/2 lb. spinach
    1/2 cup vegetable broth or water (I will sub with bone broth)
    1/2 cup low-fat cottage cheese (I will sub with goat cheese)
    1/2 cup Parmesan cheese, finely shredded
    3 eggs, beaten
    1 clove garlic, minced
    Salt and pepper to taste
    1/4 tsp. Onion Powder
    1/4 tsp. Garlic Powder
    1. Preheat oven to 400º F; grease muffin pan.
    2. Wilt kale and spinach in a little water or vegetable
    broth. Drain and dry greens.
    3. Mix all ingredients in a medium size bowl.
    Divide mixture into 6 muffin pan cups.
    4. Bake for 15-20 minutes. Wait 5 minutes before removing
    from muffin pan. Enjoy.

    I have been to a few Paleo potlucks and absolutely gorged myself...yummm

    I would probably whip up some sort of sweet potato or butternut squash casserole - mainly because it isn't something I would make to have at my house because I would eat it ALLLLL....so I could make it have a scoop and have other people eat it all up.

    The last time I went to one - I made Larabar bites with some ground raw almonds, Mejool dates, coconut oil and unsweetened coconut flakes - grind everything up in a food processer, roll into balls and then roll balls into more coconut flakes - once again one of those things you only want to have a bite or two - but if I had a whole batch in my house - NOM NOM NOM

    I'd bring the Chocolate Chili from Well Fed or the Kalua Pork from NomNomPaleo. Two of my favorites!

    My Bolognese sauce turned out fantastic and was a great experience learning how to cook like that. It was an A+++ day and meal!

    I'm definitely gonna try your ideas :-)
