LC and Gluten Free

Are on of you doing LC and Gluten Free? My Dr. is hinting that this may be the best route for me due to health issues, etc. Most everything I eat is GF anyway but I do LOVE my LC tortillas.

For those of you that are following both... did you find it super hard to switch to GF? Once you were past the first few weeks, was it easier? Did you find gluten hidden in any of your favorite things that you otherwise thought were GF?

    I went Paleo due to health problems. I love it. I do miss the gluten stuff sometimes but I just remind myself it's not good for me. Yes, gluten is hidden in a lot of things, and if it isn't gluten it is soy, another no no. It's really not so bad and forces you to eat real foods. Good stuff. My style of Paleo just so happens to be low carb so I don't replace gluten items with gluten free versions, I just skip the grains altogether.

    Ditto on the gluten free versions. I want to eat all things naturally gluten free.

    ^^ EXACTLY(!) this for me too! At first when I had to go gluten free,I replaced regular processed foods with gluten free versions, as well as, gluten free grains. I gained a bunch of weight. I also started having major problems with hypoglycemia. I'm not diabetic, but my blood sugar was all over the place, especially with anything that was made with rice. Gluten is found in just about everything processed. I found a lot of celiacs live Paleo and thought I would try it for a month to see how I felt. That was a year ago and I feel amazing. I ditched all grains (but have dairy every now and then) and noticed I ended up low carb. An added bonus is the weight I gained from first going gluten free has been falling off effortlessly.

    Me four - Primal/paleo is how I found I have a gluten sensitivity. Yes, it is hidden in a lot of things - beer (even LC), deli meats, hot dogs/sausages, anything with soy sauce, canned broth or boullion, even omlettes sometimes - some places use pancake batter to make them 'fluffy'. I only order eggs to order now. :angry:

    But my gut is a lot happier when I avoid the gluten and milk!! :flowerforyou:

    I am pretty much gluten free by default. I am so low carb that anything with gluten doesn't fit into my diet. I never thought I was gluten intolerant, but, the other day we were at a dinner where I could not choose my entree. It was baked chicken rolled in what was most likely bake n shake. I was bad and ate part of the breaded skin. I bloated up and was miserable for the rest of the dinner.
