I've enjoyed others' recipes so much! I thought I would share this one with you. I think this will help me get through the holidays.

Easy Peanut Butter cookies
1 c. natural peanut butter (no added sugar)
1/2c Blanched Almond Flour
1/2c Swerve Sweetener
1 egg
1 t. vanilla
1 t. baking soda
Combine all and bake in preheated oven 350 degrees for 10-15 mins. Makes 24 cookies.

I haven't purchased blanched almond flour before. Do most markets carry it or do you go to a specialty store for it?0 -

I get mine at either the regular market - Bob's Red Mill prepackaged brand, or at a store than has bulk type foods. (Clark's or Sprouts here in my area)

Getting swerve is difficult around here... Can you substitute stevia? How much would you use?0

You can also not use almond flour and just increase the swerve to 1 c. the original recipe, calls for 1 c. sugar, so I switched it out with 1 c. Swerve, but it was too sweet with Swerve.
Also, Swerve is considered a sugar alcohol, so the carbs are not counted (doesn't make sense to me, but was told this.) Just wanted to let you know this too.
I'm not sure about using other sweeteners. You probably have to enter the recipe in the recipe builder ???
It is very easy. I bake it on a silpat or parchment paper.0 -
You can buy almond meal from any store that carries Bob's Red Mill or Hodgson Mills products, like Whole Foods.0

Made these yesterday with 1/2 teaspoon Stevia, and it worked very, very well... Yummy!0
