Not exactly sure what deficit means and what it has to do with the amount of calories I'm eating?

eating at deficit means eating less calories than your body burns in a day..or otherwise known as your TDEE value.
However you do not want a massively large deficit. 200-400 cals is about all you need to lower in order to have good results.

Your body burns so many calories each day doing everything you do - That's called your Total Daily Energy Expenditure, TDEE.

If you eat that much food, you maintain weight.

If you take a deficit off that TDEE, you are eating less than you are burning - you lose weight.

If you eat in surplus of that TDEE, you are eating more than you are burning - you gain weight.

If you intend to lose weight, hopefully the amount of calories you are eating is in deficit to what your body is burning through all it's activity.

And contrary to simple logic, more is not better, because the body requires so much, and if threatened with a big deficit will make weight loss, and usually fat loss, harder than it needs to be.
