Seared Salmon & Spring Onion Mash
Syns per serving: Syn Free on Extra Easy plan
Serves 4
Ingredients:
4 skinless salmon fillets
zest & juice of one lime
4 tbsp light soy sauce
salt & pepper
2lbs/908g potatoes, peeled & cubed
1 garlic clove, crushed
6-8 spring onions, finely sliced
A handful of fresh dill, chopped
3 1/2 fl oz/100ml hot fish or chicken stock
1 red chilli, deseeded & finely sliced
Pak choi, to serve
1 lime, cut into wedges to serve
Method:
Place the salmon in a shallow, non metallic dish. Mix together the lime juice & light soy sauce, season & pour over the salmon. Leave it to marinade for 10-15 minutes. Boil the potatoes in a pan for 15 minutes or until tender. Drain & mash then stir in the crushed garlic, spring onions, dill & stock. Season & keep warm. Heat a large non stick pan over a high heat & cook the salmon fillets for 4-5 minutes on each side or until just cooked through. Divide the salmon & mash between four plates. Garnish with the chilli & serve with the pak choi & lime.
