Turkey & Mushroom Stroganoff

♥ Turkey & Mushroom Stroganoff ♥
♥ From the Comfort Foods recipe book ♥
Serves Four
Ready in about 30 minutes.
Ingredients:
Fry Light
4 bacon rashes, all fat removed & cut into strips
1lbs/454g cooked turkey, all fat removed & cut into bitesize chunks
400g chopped tomatoes
1/4 pint/142ml chicken stock
2 red peppers, deseeded and roughly chopped
11oz/312g button mushrooms, halved
2 tsp dried herbs
salt & freshly ground pepper
7oz/198g fat-free natural fromage frais
A small handful of parsley to garnish
1. Spray a large pan with fry light and cook the bacon and turkey for 3-4 minutes. Add the tomatoes, stock, peppers, mushrooms & dried herbs. Season & bring to the boil.
2. Reduce the heat, cover and cook for 15-20 minutes. Remove from the heat, stir in the fromage frais, garnish with parsley & serve with seasonal vegetables or rice/sw chips.
So simple to make & very tasty!
