Jerky turned into a roast

I got all motivated on Saturday to make my own jerky. I was rearranging my chest freezer, and pulled out a big huge brisket and a flank steak from my cow. I wasn't sure which cut to use, and both seemed sort of "jerky-ish".

I googled it, and realized brisket was a bad choice for jerky - you need to pick a very lean cut, since a fatty cut will make the jerky go rancid faster. So... I cooked up the brisket on Sunday, and leftovers last night. Still more leftovers in the fridge.

Meanwhile, now it's Tuesday, and that flank steak was still sitting in the fridge this morning. Clearly, no jerky making was in the cards for today either, so I stuck it in the slow cooker with some onions and carrots and it's cooking away until I get home from work. I think I'm going to have to freeze the whole thing when it's done, because I'm pretty much beefed out after all that brisket, plus beef and veggie soup for lunch today.

So, now I STILL have to figure out what to make for dinner, AND I need to buy some jerky. Rant over.

  • HA! That sounds so much like some of my cooking adventures! :) Well, at least you'll have a ready to go meal in the freezer the next time you're pressed for time.

    Ugh. My "beef stew" for lunch turned out to be chicken and veggie soup, full of beans and corn. It was labeled "Chicken Veg Soup", so I'm not sure why my brain translated that as beef stew. Or why I didn't notice the date I wrote on it, which would have clued me into my pre-paleo soup making days. Whatev! At least it tastes pretty good.
