i have no idea at all how a removed large intestine would affect the following guidelines, but maybe this general information will help.

you need to know you BMR (or TDEE, or whatever else they call it), this is how many calories on average you need to consume per day to sustain your body weight. you can find calculators online that are fairly good at giving you a starting number (http://www.fitnessfrog.com/calculators/tdee-calculator.html), and then you can adjust and fine-tune through tracking your weight and food you eat over a course of a few weeks.

For a usual case, if you eat more calories than that - you gain weight, less - you lose weight. Not sure about the fine details in your case.

Then there are macronutrients (carbs, proteins, and fats). These are mostly the sources of the calories. You can play around with the ratio of macronutrients and see what works best for you. For example, for muscle building i almost always see 40% carbs, 40% protein, 20% fat (another notation 40c/40p/20f), just to show you a reference. Normal people find this a bit too heavy on proteins haha.

But yeah, the simple idea here is: if you want to gain weight, you need to be in caloric surplus. Usually, to keep things clean and your body fat low, it is not recommended to go beyond 500 calories surplus, 250-500ish is fine.

Hope this helps, and good luck! gaining good, clean weight is a real pain in the behind
