Like I said, this thread would be started so we can pool our resources.

Let's share those ideas and ways we have found to keep the calories, sodium, etc. down.


Mexican Pizza / Quesidilla

2 corn tortillas
Sargento Swiss Cheese Slices
optional Fillings:
diced onions
Fat Free Refried Beans
Seasonings to taste

Toast in toaster oven on medium or bake tortillas for about 5 minutes at 350 F

top one with a Slice of cheese, 1/4 to 1/2 serving of beans, seasoning, second slice of cheese, and second tortilla

place back in oven / toaster oven and cook same amount of time

Gives you that nice crisp quesidilla and melted cheese with less than HALF the calories or sodium.

For soft quesidillas, cut each cooking time in half.

    Ok that sounds tasty and I can eat it!! I might have to try that! Though I don't have a toaster oven. Can I use an oven instead?

    Should work... try about 5 min at 350 and put it on a cookie sheet or pizza pan.

    2 lb ground turkey
    1 pk frozen spinich
    2 pk fat free cream cheese
    1 onion
    1 can of green chilles
    1 big can of diced tomotoes

    Garlic powder
    Paprika
    Cumin to taste

    pour your mixture into wheat tortilla's

    Well, you do have to brown the turkey in a big pan. Add tomatoes and spinich, bring to a boil. Add spices and cream cheese then roll up your tortillas with how much you want in each one.

    Bake at 350F for 35 minutes.
