Holy freakamoly!! So you know I follow a paleo diet now. Love it. I recently had mashed cauliflower. Its so yummy. JUST like mashed potatoes. I turned it into creamed cauliflower soup and OMG so delish. I wondered what the benefit was and here you go….. unbelievable.....

Potato:
Calories 440 Sodium 0 mg Potassium 1240 mg Total Carbs 104 g Dietary Fiber 8 g Sugars 4 g

Cauliflower:
Calories 14 Sodium 9 mg Potassium 88 mg Total Carbs 3 g Dietary Fiber 2 g Sugars 1 g

Can you believe how the carbs and sugar would add up with a heaping pile of potatoes?
