    Sounds good!! Depending what salad I'm having ill either have regular oil and vinegar or I buy frozen strawberries and let like 6 unthaw overnight so they're soft as I mush them up as use them as dressing :)

    Olive and balsamic:

    5Tb olive oil
    2TB balsamic vinegar
    Juice of 1 lemon
    1tsp dijon mustard
    Salt and lots of fresh ground black pepper

    Shake all together until well combined, best made at least half and hour before needed. Lasts in the cupboard for at least a week.

    Reduce 2 c. pomegranate juice to syrup over medium heat (takes 45-70 minutes) and mix 1:3 with balsamic vinegar. Use this in a vinaigrette :-)

    I also recommend this dressing - I'm pretty sure this one fits under Paleo:
    -Red chillies
    -Red pepper.
    -3 tbsp red wine vinegar.
    -4tsp olive oil.

    Tastes amazing both as a dressing, and as a marinade for chicken breasts - skin on, btw, for extra crispness.
