What are some of your favorite healthy Asian foods?

I know some of Asian cuisines can be quite calorific but I think with a few twist, we can surely turn it into a healthier version of the foods that we all grew up to love.
In my case as far as Filipino food is concerned, I love Kare-Kare but what I do is to pick more veggies and easy on the peanut butter sauce. Also there is a vegetarian version of that dish as well. As weird as I may sound but my favorite is a seafood dish which is the Filipino version of Ceviche locally known as Kilawin, it is made from raw fish cooked in vinegar with seaweeds, onions, ginger and garlic.
How about you? Also can you share some of your recipes?
