How do I eat enough?

So I hadn't lost any weight in awhile, but I also hadn't been exercising regularly. Now that I'm logging calories, I am struggling and way under-consuming calories! I've already eaten breakfast (larger than normal, too) and lunch, but I've also worked out so I still need over 1200 calories - that's almost a whole day's worth of food? How do you do it? Any tips, recipes, etc?
