As busy working moms here is an easy, healthy, crockpot recipe that I found on one of the message boards. I tried it today and like it so thought I would share.

Buffalo chicken:
1 pound boneless, skinless chicken breast
half jar of Frank's hot sauce
1 package of Hidden Valley Ranch dry packet

Put chicken in crockpot, add hot sauce, and pour ranch packet on top.
I cooked on low for about 6 hours and shredded with a fork prior to eating.

I ate as a taco salad with chicken on top of lettuce with cheese, sour cream, and salsa.
You could use it to fill a taco shell too.
My husband topped a baked potato with the chicken.

It was healthy and filling.
