quick breakfast ideas

I eat 2 hard boiled eggs every morning for breakfast at work...the weekends I make different things as I am not in a rush....however I am getting so bored, I need something quick though to make, and ideas or recipes would be great, even something I can make the night before. Ideas anyone??? thanks! :flowerforyou:

    I get 2 pounds of ground chicken/turkey at the store, and season it as sausage and cook 8 patties on Sunday. I grab 2 a day and pop them in the microwave and a small bowl of fruit and breakfast is served.

    Do you have time at night to make your breakfast for the next day? That's what I like to do a lot just because I usually wake up starving and don't want to wait to cook something. One of my favorites is roasted butternut squash (cut in chunks, roast in oven on 425 for approx. 30 minutes), then I cook up some pork breakfast sausage and mix those 2 together and put it in the fridge. You can just heat it up and eat it like that or if you have a couple of minutes you can fry up an egg and put on top. Its especially good with a runny egg oozing over the sausage and squash. Yum!

    You can buy precooked all natural sausage....that's what I do most mornings.
  • My usual breakfast at work for years has been nuts, string cheese, and fruit/berries. Real easy to grab and go. Just finished the last of the string cheese this morning - no more of that. I might make up some little scrambled egg and sausage bowls and use up the rest of the shredded cheddar this weekend for breakfast bowls for next week.

    Howbouto, what do you use for seasonings? That sounds tasty and convenient.

    This is the basis of my seasoning, I change it a little each week to "spice" things up. (this is one pound of meat)


    3 1/2 teaspoons paprika
    2/3 teaspoon garlic granules or 2/3 teaspoon garlic powder
    1/3 teaspoon fennel seed
    1 teaspoon ground black pepper
    1/4 teaspoon crushed red pepper flakes, for spicy


    I do not salt my mix but salt my patties. If you prefer you can add 1 1/2 teaspoons of salt.

    I have been known to add ground cloves, cumin, majorum, chili powder.

    I make a variation of a recipe I found on PaleOMG (http://paleomg.com/sugar-detox-pumpkin-cake-mug-chocolate-sauce/)

    I basically take either pureed pumpkin, or mashed sweet potatoes, mix it with an egg, a bit of coconut flour and spices (cinnamon, ginger, cloves, or pumpkin pie spice). Then I take it to work and microwave it for a couple of minutes. It's like having pumpkin pie or sweet potato pie for breakfast. Yum!

    I am just getting started too. I do a big omelette and then divide it up. I usually start with a big bunch of swiss chard and onion and saute until the greens are wilted, then add eggs and a bit of cheese on top.

    I'm not full paleo, for now I am just eliminating all wheat and sugar. I still eat dairy and other whole grains sparingly. I will probably be moving more toward paleo, but for now I am easing in. Giving up wheat and sugar is a huge deal for me as I am a sugar junkie!

    Try making an egg scramble in the microwave! Basically over the weekend, beat eggs and mix in fresh veggies and/or cooked meat. Put them into ziploc bags, defrost one in the fridge overnight, then throw it in the mircowave in a bowl/mug for like 30 seconds, stir, and repeat about 2 or 3 times until cooked. Then you can eat straight from the mug or bowl too! :)
  • I cook salmon or get a big pack of smoked salmon and portion it out, and have it for breakfast with lemon juice and tabasco on and some scrambled eggs that I cook in the microwave at work. Yum.

    already copied the recipe, looks amazing !! this sounds really good too. salmon for breaky!! yummers!!!!

    I make Egg muffins and they are great!!! I make 12 at the beginning of the week so me and my hubby can take 2 muffins 3x a week.

    To make 12

    6 Whole eggs
    12 Egg Whites
    Chopped fresh baby spinach (put as much as you like)
    Chopped Green Onion (or any onion, again, as much as desired)
    Cheddar (optional, I do dairy once in a while(although not paleo) but measure it out.... I put 1 tsb in each muffin cup)

    Bake at 350 for 20-25 min. The extra can be refrigerated and usually only need about 30 seconds in the microwave to enjoy. Get some nitrate free organic turkey pepperonis and you have a complete meal!

    I also have the recipe for paleo pumpkin pancakes, let me know if you want it.

    Love these...so freakin easy - I will make up a batch on a Sunday night and then have 2 each morning with some turkey sausage for breakfast (I really don't like the yolk so this works perfectly for me) - they are also great to have on hand if you feel like you need something to snack on...big tip - don't ever, ever forget to spray your pan - even it is "nonstick"

    Breakfast has always been hard for me. I can't eat eggs, dairy, or nuts. I usually end up eating whatever leftovers I have in the fridge or I end up cooking something. I have to do a better job of keeping meats in my fridge for easy access. Otherwise I have to wait for it to defrost. This week I had boneless chicken breasts and ground meat. I used the chicken twice and I still have a couple in there. Tonight I used the beef for Well Fed's shepherd's pie.

    I make paleo pumpkin pancakes, and keep the leftovers in the fridge.. it keeps for about 2 days (never tried longer) and is soo fast to eat!

    My wife and I make breakfast casseroles. 12 whole eggs, 1 pound of meat of you choice, 1 green pepper, 1 medium onion, 8 ounce package of mushrooms and top it off with shredded cheese (optional). Mix together and bake. It makes 6 servings and is easily refrigerated for microwaving later.

    I love the egg muffins, but I add a slice of bacon around the edge (as if it is the paper casing. The runny egg attaches itself to the bacon as it cooks. I would makes those and take them in or make breakfast the night before and grab it quick next day.
