SPINACH LASAGNA RECIPE

:smile: 1 pkg sausage (can substitute veggie meat for my vegetarian friends)
2 10 oz. pkg. of frozen cut spinach
2 26 oz jars of no-sugar-added tomato sauce
1 15 oz. part skim ricotta cheese ( can substitute tofu)
2 Large eggs
1 box whole wheat lasagna noodles
1 small box of fresh sliced mushrooms
2 C shredded mozzarella cheese ( can substitute vegetarian cheese)
Grated parmesan cheese to taste

Preheat oven to 350. Brown sausage in a med. nonstick skillet. Meanwhile, place spinach in microwave to thaw. Drain well. Mix together tomato sauce, ricotta cheese, and eggs.
Spread thin layer of sauce mixture over bottom of 9x13 pan.
Top with layer of uncooked noodles, another layer of sauce, a layer of spinach, a layer of sausage, a layer of mushrooms, a layer of mozzarella, and layer of lightly sprinkle parmesan.
Repeat all 8 layers.
Cover with foil.
Bake 1 hour.
Let stand 15 minutes before serving.
Serves 6
