I sometimes find myself in a hurry for breakfast. Or even a late snack. So this month the challenge is to set up pre cooked meals for yourself. I made two little containers of a breakfast burrito mix and froze it.
6 scrambled eggs
3 potatoes boiled and diced
4 hot italian sausage, chopped up
1 large red bell pepper diced
1/2 cup diced onion
1 tsp garlic powder
Cooked it all seperate, and combined in a container.
This morning I defrosted it just enough so I could take some out. Heated it up and put on a wheat tortilla.
It was delicious, healthy and no dishes to clean up later!
