Nitrites and Nitrates in Bacon

I came across this article on Chris Kresser's website, The Nitrate and Nitrite Myth: Another Reason not to Fear Bacon.

This is contradictory to what I've read before and been told when trying to find bacon and sausages. Has anyone else heard of this?

    I have heard of this. I believe they mentioned this on the Balanced Bites Podcast. As long as it's coming from a good source, like a local farmer or butcher using pastured pork, it's not an issue.

    I think the problem is with conventional bacon. Everything about it is bad, from the pork to the means they use to process/preserve it.

    Getting as close to natural pastured bacon as possible will be your best bet.

    Huh. I have been buying uncured bacon, but I may change to buying bacon at the local butch (all their meats have been pasture raised.)

    Ditto. I don't eat bacon every day, and when I do, only 3 strips. If I was eating it by the pound on a daily basis, I'd be more concerned.

    I eat bacons at breakfast, lunch, and dinner for past 12 months (not 100% of the time but most of the time). I am doing okay and I am more happier.

    Oh, I agree! It gets to be too complicated after while, hearing Robb Wolf say this, but Chris Kresser says that. You should "always" eat this, but "never" eat that, but ok, welllllllll, now research is showing that its not as bad as we thought...

    I was always taught nitrite/nitrates were the boogey man. Now it's good for me. I think we all can agree, bacon indeed IS good for you.
