Found this recipe in Woman's Day magazine, looked yummy so sharing it.
Roasted Red Pepper, Green Bean and Red Onion w/ Quinoa
In a large bowl, toss 2 roasted red peppers (cut into 1/4 in pieces), 4 oz green beans (cut into 1 in pieces) and 1/2 a red onion (finely chopped) with 1 Tbsp olive oil, 2 tsp red wine vinegar and 1/4 tsp salt and pepper. Fold the mixture into 2 1/2 to 3 cups of cooked quinoa.
Makes 4-6 servings at about 130 calories each with 20g of carbs, 4g fat, 4g protein, and 106g sodium. And if you leave out the salt it will be even less sodium (the calories were determined with the products I currently have on hand so may differ slightly).
This looked yummy to go beside some roasted or grilled Italian Chicken.
