Since we are all lo9oking for ideas and creative ways to eat healthfully. Let's get some posts here about what we are eating for dinner.
Yesterday, I combined spicy brown mustard and low fat mayo in equal parts. Then I rolled chicken breast in it. Sprayed a baking sheet with Pam and baked it for 20 minutes in a 400 degree oven. Not only is it delish, I used the extra sauce on the baking dish as my salad dressing.

I basically construct all my meals the same way: some kind of meat, a small portion of starch, and a salad/sliced veggies/steamed veggies. Or I stir fry chicken breast with chopped veggies and serve over rice or noodles. Below are some of the healthier meats and starches that I mix and match.
Meats:
Baked chicken pieces
Grilled chicken breast with marinade
Baked chicken nuggets
Grilled beef
Baked salmon
Starches:
Whole wheat Israeli couscous
Whole wheat spaghetti
Kasha
If I want something fried, I might also do turkey cutlets on the theory that it is healthier than chicken shnitzel.0
