Xanthan gum - tastes like plastic

Ok. I started my first attempt at protein fluff.
3 egg whites
1tbsp light brown sugar
Whippeped them until I got peaks.
Dumped in 40g of whey protein powder, 1 tsp xanthan gum, 2 tbsp cocoa powder, 1 shot of espresso, 0.5 cup 2% milk.
I then electric mixed the whole lot for 8 minutes.
It had a thick goopy consistency.
I put my finger in to try some, and it tastes of well nothing really. It feels like the whole thing is coated with some kind of invisible tasteless plastic ****. Is this what xanthan gum brings to the table. If so, I don't want it.
Any tips on how to rescue this mess before I thrown it in the down the sink?
Edit: too late, I've thrown it all away. I've got some pumpkin purée in the freezer to make some of sidesteel's pumpkin protein fluff.... But am a bit wary now.

Edit2: read leangains. Seems the whey protein powder I used could have been to blame for the poor fluffyness, still think the bad taste was down to the xanthan gum
