Help!! Share your pancake/dessert recipes

Iv been trying a few paleo pancake recipes but they aren't working!! Anyone have any tips or could share there favorite pancake or bread, or dessert recipes

Bread - pretty much forget it...I have tried making a Paloe bread with almond/coconut flour blends and haven't found one that is great...
Pancakes - I have found a few that use pumpkin or mashed bananas - they have been OK - but not so wonderful that I feel the need to make the recipe again

One thing to watch though with any of the pancake/desert type recipes you may try - all the ones I have found have a tendancy to be quite carb heavy as they use things like sweet potaoes & bananas + a good amount also use honey as a sweetner = more carbs...so if you are one who is also watching their carb count be very careful...as it isn't "net" carbs you are after it is total carbs0 -

3 eggs
1/4 cup coconut flour
1/2 tsp stevia
1/2 tsp baking soda
1/4 to 1/3 cup unsweetened almond milk
1 tsp cinnamon (optional)
Coconut oil for frying pan
Beat eggs add dry ingredients and then add almond milk until you have batter consistency...it will be THICK. Stir until well mixed.
Make 1/4 cup size pancakes in hot pan greased with coco oil. When bubbles form flip just like reg pancakes. Serve hot with grass fed butter or pure maple syrup our better yet from mashed strawberries or blueberries....

Dessert? Hell yeah.
Avocado, mashed up with a couple tablspoons of cocoa powder nd some stevia, maple syrup or honey. Hell, toss in a Flake bar if you're feeling extra naughty ;D It's the most AMAZING mousse and I'm pretty much obsessed with it. Leave it to chill in the freeze for a few hours for a more ice creamy texture.
A new one I've found: pumpkin. Mash the interior of a pumpkin (though I believe Americans already have canned "pumpkin purée" with some cinammon and stevia, and microwave the whole lot for a good thirty seconds to a minute. The result? Potentially, a MASSIVE bowl of warm, comforting deliciousness perfect for those Winter nights. Srsly. It smells and tastes incredible, and has a ridiculous volume/calorie ratio. A whole KG of pumpkin (1000grams) is only 260 calories. So t's quite literally a guilt free dessert.
Finally, the simplest of all: bananas. Frozen bananas. You can do so many things - from making flavoured protein shakes to just mashing t up as "banana sort serve" - but personally I like to just have them plain, frozen with maybe a dollop of nut butter and dark chocolate on top.0 -
we do the frozen banana "ice cream" thing. Just frozen ripe bananas & cocoa powder int eh food processor. I'm going to have to try the sweet potato brownies though! ... I have trie dthe avocodo mousse - AWESOME!0

I liked it because it doesn't use a sweetener and still very tasty. Also, one of the few that uses coconut flour instead of almond flour (which is ridiculously expensive around here). I sub-ed coconut oil for butter and cashew butter for the almond butter. Delish! Obviously carb heavy though.0 -

pour in batter. I found if you put a lid on and turn it low the steam sets the top . Wait a while before trying to flip- or it will scramble.

Almond flour - look for Almond Meal - it is usually cheaper, not as fine as flour but can be used just like the flour - if you have a Trader Joes they have an Almond Meal that is less than $4 a bag
You can also buy raw almonds in bulk and run them through a food processor0 -

I have found that raw almonds are even expensive! I end up buying the roasted ones just because they're cheaper. I will definitely try trader joe's for the meal though, thank you!!0 -

Fluffy Paleo Coconut Flour Pancakes

Prep time: 10 mins Cook time: 10 mins Total time: 20 mins
Serves: 4
Ingredients
4 eggs, room temperature
1 cup coconut milk (or almond milk)
2 tsp vanilla extract
1 tbs raw honey
½ cup coconut flour
1 tsp baking soda
½ tsp sea salt
fruit (optional)
coconut oil for frying
Instructions
Preheat griddle over medium-low heat
In a bowl, beat eggs together until frothy (should be able to make peaks). Mix in coconut milk, vanilla, and honey.
In a second bowl combine all the dry ingredients. Slowly whisk in the wet mixture into the dry until it is incorporated.
Grease the griddle with coconut oil and pour batter into small (2-3 inch) pancakes.
Cook until edges are firm (takes longer than regular batter ~ 3min) then flip and cook through
Serve hot with maple syrup, coconut butter, honey, or fruit
Notes
* If you don’t like the taste of coconut then use almond milk. The combination of coconut milk and the flour has a strong coconut flavor.
* I don’t like plain pancakes so I put small blueberries in the batter before cooking.d
* To make it fluffier, whisk the egg whites separately then fold into the batter at the end.

2 cups blanched almond flour
2 tablespoons coconut flour
¼ cup golden flaxmeal
¼ teaspoon celtic sea salt
½ teaspoon baking soda
5 eggs
1 tablespoon coconut oil
1 tablespoon honey
1 tablespoon apple cider vinegar
Place almond flour, coconut flour, flax, salt and baking soda in a food processor
Pulse ingredients together
Pulse in eggs, oil, honey and vinegar
Pour batter into a greased 7.5 x 3.5 magic line loaf pan
Bake at 350° for 30 minutes
Cool and serve

I found the original recipe a little oily, so I sub coconut oil for butter and reduce it to 3 Tbl, and I also use honey instead of agave. They're pretty carb heavy, so I only make them for parties and things like that--my husband loves them, he nearly devoured an entire batch in one day. They're good with dried fruit instead of the chocolate chips too!

If you eat dairy...
-Greek yoghurt, plain, volume of your preference
-Vanilla protein powder, one scoop
-Frozen berries (blueberries/raspberries/mixed/etc), enough to make the mixture thick
-Other toppings (nuts/chocolate/coconut chips), your preference
Mix it all together and place in the freezer for a few hours. Every thirty minutes or so, stir it and make sure the mixture doesn't cling to the side and/or freeze solid. Serve when consistency of your preference is reached.
The result... A customised berry ice cream!

That's GY, vanilla whey protein, blueberries, coconut chips and half a Lindt bar. Obviously, people can scale it to their preference, but in any case - delicious.0
