Had to share, made this this morning with half the honey...as I know some don't eat honey, I eat it on occasion...however it was so easy and very delicious!! I also reduced ingredients to a third for 2 servings and it turned out fine ...good thing I did because i would eat the whole thing!
( t. is teaspoon)
6-8 c. chopped apples (I used granny smith)
2½ t. cinnamon
¼ t. ginger
⅛ t. nutmeg
⅛ t. cloves
¼ t. kosher salt
½ c. honey, divided
¼ c. coconut oil, in solid state
1 c. finely chopped walnuts
Preheat oven to 400.
Place chopped apples in 9×13 inch baking dish.
In small bowl, whisk together spices and salt. Sprinkle over apples and stir to evenly coat.
Drizzle with 1/4 cup of the honey and stir to evenly coat apples.
In same small bowl, cut coconut oil into walnuts until no chunks of oil remain.
Stir in honey, then sprinkle mixture over apples, breaking it up with your hands as you go.
Bake at 400 for 30 -35 minutes or until apples are tender
I try not to eat much fruit but this was def a treat, could even be a dessert or breakfast
