Ingredients
2 cans black beans (rinsed and drained)
1 can corn kernels (frozen whole, thawed)
2 tomatoes (diced)
1 avocado (peeled and diced)
1 diced red onion
1/5 cup fresh cilantro (chopped, leaves)
Toss in the following ingredients
2 tbsp lime juice
1 tbsp red wine vinegar
sea salt
pepper
cumin

I'll share one too........My "Go-To" salad.... Filling and healthy !
1 pound Baby Spinach
1 pint Strawberries sliced
1 small container Blueberries
3 Cutie Oranges - peeled and sectioned
1/4 cup slivered almonds
Dressing: Maple Grove Farms Fat Free Raspberry Vinaigrette (35 calories for 2T)
Mix everything in a large mixing bowl. Pour approx 1/4 cup of the salad dressing over and toss.
Enough for 2-3 people.0 -
