Coconut Crack Bars

Made these today. Had to laugh. 6-8 bars is laughable. If you cut them into bars, they'd be itty bitty. It made 12 truffle size candy shapes - so 2 balls per serving, 6 servings. Regardless, they are pretty yummy!

I live in a very rural town - meaning the nearest health food store or super store is 100+ miles away. Amazon Prime is your friend. You can find anything there - and get free shipping to boot! :drinker:0

Made this afternoon as an Easter treat - stirred in some cocoa nibs and finely chopped soaked/dehydrated almonds before rolling into balls. Yum!! A bit sweet for me, though; next time I may try 1/8 cup maple syrup and 1/8 cup coconut milk for the liquid component. (yes, there will be a next time!)0

Well, now I simply have to make this AND dip them in Lindt extra dark chocolate! It's a good thing I sell it, because I have plenty of bars for all the cococrack bars I'll be devouring! Thanks for sharing0

OMG, these are AMAZING!! I love coconut so much so when I loved how this was an easy no-bake recipe. I didn't even use a food processor, just mixed by hand and it came out perfect. I made double because it seriously made nothing. Are these okay to eat as a late night snack? It's definitely tricking my mind into thinking I'm eating unhealthy sweets, especially since I put a thin layer of 70% dark chocolate over them. I had my family try some too, and had to hide the rest because they were eating all of them!0
