Pumpkin Bread
Prep time: 10 minutes / Cook time: 35 minutes

What you’ll need
⅓ cup nonfat vanilla yogurt, plus 1 tablespoon
2 cups canned pumpkin
3 large eggs
¼ cup canola oil
1½ cups whole wheat flour
1 cup flour
½ cup spoonable sugar substitute
¼ cup dark brown sugar
1 tablespoon baking powder
1 tablespoon pumpkin spice
Dash salt
¼ teaspoon cinnamon
½ cup golden raisins, chopped
¼ cup walnuts, finely chopped

What to do
1. Preheat oven to 350 degrees.
2. Coat large loaf pan with cooking spray; set aside.
3. Blend yogurt, pumpkin, eggs, and oil in large bowl. Add all dry ingredients. Stir in raisins and walnuts.
4. Stir until blended. Spread batter into prepared pan. Bake for 35 minutes or until cake springs back when lightly touched.
5. Let cool.
