Tex–Mex Breakfast Burrito
Prep time: 15 minutes / Cook time: 10 minutes

What you’ll need
10 eggs, lightly beaten
½ teaspoon black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
10 high-fiber, 80-calorie tortillas
1 cup shredded cheddar cheese, low-fat
½ cup green onions, chopped
12 slices turkey bacon, cooked and crumbled
1 cup canned black beans, rinsed and drained
1 cup black bean and corn salsa

What to do
1. Warm large, nonstick skillet to medium heat. Coat pan with nonstick cooking spray.
2. Place all eggs in skillet and cook until eggs are completely set, stirring occasionally, about 3 minutes. Season eggs with pepper, onion powder, and garlic powder.
3. Spoon ¼ cup egg mixture down center of each tortilla; sprinkle each tortilla with cheese, onions, bacon, black beans, and salsa. Fold tortilla.
