Tilapia Tacos with Corn Salsa
Prep time: 10 minutes / Cook time: 6 minutes

What you’ll need
1 cup no-salt-added canned corn kernels
½ cup red onion, diced
1 cup peeled, chopped jicama
1 cup red bell pepper, diced
1 cup fresh cilantro leaves, finely chopped
2 limes, zested and juiced
1 teaspoon cayenne pepper
1 teaspoon cumin
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon paprika
1 teaspoon ground black pepper
2 tablespoons olive oil
6 (4 ounce) fillets tilapia
6 whole wheat tortillas, warmed

What to do
1. Preheat grill for high heat.
2. In medium bowl, mix corn, red onion, jicama, red bell pepper, and cilantro. Stir in lime juice and zest.
3. In small bowl, combine seasonings. Brush each fillet with olive oil and sprinkle with spices.
4. Arrange fillets on grill grate and cook for 3 minutes per side. For each taco, top tortillas with fish, sour cream, and corn salsa.
