Jambalaya
Prep time: 20 minutes / Cook time: 30 minutes
What you’ll need
½ pound smoked turkey kielbasa sausage, cut into 1-inch pieces
1 large onion, chopped
1 large green bell pepper, chopped
2 celery ribs, chopped
2 garlic cloves, minced
1 tablespoon canola oil
2 cans (14.5 ounce each) diced tomatoes, undrained
½ cup water
1 teaspoon dried thyme
¼ teaspoon salt
¼ teaspoon pepper
¼ teaspoon cayenne pepper
1 pound uncooked medium shrimp, peeled and deveined
2 cups cooked brown rice
What to do
1. In large saucepan, sauté sausage, onion, green pepper, celery, and garlic in oil for 8 minutes over medium-high heat. Add tomatoes, water, thyme, salt, pepper, and cayenne; bring to boil. Reduce heat; cover and simmer for 15 minutes.
2. Add shrimp; simmer 5 minutes longer or until shrimp turn pink. Stir in rice.
Makes: 6 servings
