Brunch Recipes with a Carrot Theme

The Easter Bunny might deliver chocolate, but a healthy rabbit eats carrots. Healthy kids and healthy adults should too. Carrots are low in calories, full of fiber and antioxidants. Use these recipes, compliments of Bolthouse Farms, to swap carrot-filled foods for higher calorie brunch staples.

Skinny Mashed Carrots

•2 bags (32 ounces) Bolthouse Farms® Baby-Cut carrots, cut into 1/4-inch-thick
slices
•2 potatoes
•1/2 cup low-fat milk (1%)
•2 tablespoons olive oil
•3/4 teaspoon salt
•1/4 teaspoon coarsely ground black pepper
In a 4-quart saucepan, heat carrots, and enough water to cover to boiling over high heat. Reduce heat to low, cover and simmer 15 minutes or until potatoes and carrots are tender. Drain carrots well and return to saucepan. Cook 1 minute over medium heat, shaking pan constantly to dry out vegetables. Remove saucepan from heat. Add milk, olive oil, salt and pepper. With potato masher or mixer, mash carrots until almost smooth, heat through.
Serves 6

Carrot Fries

•1 bag of Bolthouse Farms® Baby Carrots
•1/4 cup olive oil
•1 T Cinnamon
•1 T Cumin
•Salt / Pepper
Place the carrots on a pan, rub with olive oil and spices and bake in the oven at 350 degrees Fahrenheit for about 20 minutes. Remove the pan and sprinkle with salt as needed. Get creative and add some more spices that you like.
