I need help eating my vegetables! I know that I am not eating enough vegetables and would feel much better if I did. Recipes? suggestions? Thanks!

    Roast them...put a bit of oil on them and whatever spices you like (garlic powder is great)then roast them on the grill, the George Forman, or in the oven. In the oven you can even do brussels sprouts this way. Zucchini, onions, carrots.... anything you like. Also, cook them into soup that you later blend ... I do this with lentil soup (not Paleo) and my kids love it because there are no visible veggies. Cook some in with your scrambled eggs. Drop some into a smoothie. Grate them and put them in meatballs or meatloaf. Raw veggies can be really good too...raw carrots taste sweet, and cherry tomatoes are a great snack if you eat tomatoes. Good luck!
