Endurance Athletes with Paleo tips?

Hiya!

I'm about to start a nearly-Paleo elimination diet, testing for allergies and sensitivities. This will all coincide with cycling season, and I do like to rack up the miles, with 5-6 hour rides once or twice a week.

DOes anyone have tips or tricks on paleo endurance fuel; food to eat while on the road, ideally while in motion?

Man can not live on banana alone...
