Copycat Atkins Frozen Meal-Chicken & Broccoli Alfredo

I love Atkins pre-packaged food. It's so convenient! An their pretty tasty (except the beef merlot. Stay away.). However, they're ridiculously expensive- $5.00 for a cup of food?! Uh, no.
But how do I make delicious alfredo sauce low carb? Turns out, it's not as high in carbs as I had imagined. So here's a replica of the Chicken Broccoli Alfredo frozen entree, at half the price and the same amount of carbs. It takes 2.5 minutes. You have time.
You will need:
3oz of Tyson grilled & ready chicken strips (Note: I accidentally picked up the southwest strips, which are the ones pictured. They're delicious, but will add 3 carbs per serving if you use them. The plain have 0.)
4 or 5 nice sized broccoli florets (2 carbs)
1/4 of Bertolli Alfredo Sauce (3 carbs)
Put the frozen chicken strips and broccoli in a bowl. cover with plastic wrap and microwave for 1 minute.
While that's cooking, mix together the alfredo sauce and about 2 teaspoons of water to thin it out slightly. Now that your chicken and broccoli isn't frozen solid, chop it up into bite sized pieces.
Put everything back in the bowl with your sauce and mix up. Put it back in the microwave for another minute so everything's nice and piping hot. Now eat it.
I'm inspired. I'm going to see what else I can make from the Atkins line.

There was a coupon for Adkins meals at our grocery store so I decided to try one and I got he beef merlot one because I remembered reading here that it was good and it was. I usually bring a lunch from home to work, but we've been busy this week so it's quite convenient. I'm glad this option exists!
