Grilled Vegetables

I love grilled vegetables. I bought a grill pan so I could grill in the house but I'm stuck with a small repertoire of veggies. What veggies are good for grilling and any grilling tips/herbs/sauces/things you like to do on the grill pan?
Thanks, Terrie

I grill the usual such as asparagus, zucchini, yellow squash, onions. I will grill tomatoes, eggplant, corn on the cob. The sky's the limit. You can make any kind of vinaigrette and toss the vegetables with it. But if you use oil, be careful about the extra calories. The general proportions for a vinaigrette are 2:1, meaning that you would mix 2 parts acid to 1 part extra virgin olive oil. By acid I mean vinegar, lemon juice, lime juice, etc. Add herbs, black pepper, Dijon mustard, Coleman's dry mustard or even a little tomato paste to make a tomato vinaigrette.
Use fresh products over packaged. Fresh lemons, fresh herbs, etc. You get the idea.
Please let me know how this works out for you, or get back to me with any other questions. Thanks.0
