Snap Pea and Radish Saute

12 ounces sugar snap peas 1/2 cup thinly sliced radishes 1 tsp fresh lemon juice
1 Tbls chopped fresh chives 1 Tbls butter salt and pepper to taste


Bring 6 cups of water to boil in a large saucepan. Add Peas and boil 30 seconds. Drain and rinse in cold water. Heat butter in
large saucepan over medium-high heat. Swirl to coat. Stir in peas, radishes and lemon juice. Remove from heat and stir in chives, salt and pepper. This method of sauteing keeps it crisp. It can be sauteed a little longer if desired.
