I had never had an avocado until I started eating Paleo and man are they delicious. I love them. I also used coconut fat for the first time this morning to cook my eggs in and that was delicious as well. I love discovering new foods.

    Folks say to go with the nitrate-free, uncured variety as a best case-paleo solution. I really like Hormel Black Label maple bacon, though, so I buy that often.

    But yeah, generally speaking, bacon is like all other types of meats when it comes to paleo: there are varieties that are better than others.

    Try the uncured bacon. It has a very small amount of Turbinado sugar (a.k.a., raw sugar), but none of the nitrates. (probably not 100% paleo, but I refuse to give up my bacon. :drinker: )

    Uncured bacon also has nitrates/nitrites - it just gets them from natural sources (celery/kale powder) rather than from chemicals. It is called 'uncured' because there is only enough nitrates/nitrites to keep the meat pink, but not enough to keep it shelf-stable at room temperature.

    If you want to avoid nitrates entirely, you can have your butcher order the meat and slice it for you. Bacon is made from pork belly or the side meat, so it can be called fresh bacon, side pork or pork belly. It'll come in about 10 lb pieces - have the butcher slice it, then divide it up at home into half pound portions, put it in sandwich baggies and freeze it. When you cook it, hit it with Lowry's seasoning salt (to taste), fry it up crisp - and it's just as tasty, without the chemicals.

    This morning I had 2 HB eggs and 1/2 Avocado and mixed all together... didn't have any bacon or would have tossed that in the bowl as well. Was DELISH!

    This is one of several articles on cultured celery extract and it would seem it is just as bad if not worse than actual nitrates.

    Another yummy way to enjoy avocados is to scoop out most of the flesh from each half and mix the chopped avocado with some tuna/chicken/cooked ground beef, chopped onion/shallot, capsicum, mushroom and seasoning, refill the avocado half with the mixture. Sprinkle some herbs/spices (I love chilli powder) and parmesan or crumbled goat's feta on top and roast for about 15 minutes....divine.

    I experimented today.... my avocado apple dip:

    1 avocado (mashed of course)
    4 oz Creme Fraiche (from Vermont Creamery)
    1 tsp cinnamon
    1 scoop of Vanilla Whey Protein Powder

    Mix well and scoop out with sliced apples. Delish!

    Made a bunch. I could only eat 1/2 of the serving with my apple for breakfast!
