Meals: your favourite healthy ones?

One of the things I'm constantly trying to do at the moment is find new yummy things to eat that keep me motivated to cook good food, instead of just snacking - I've found that for me it makes a HUGE difference in the way I think about eating throughout the day. So I thought we could share some of our favourite recipes for healthy meals (whether that be breakfast, lunch, dinner or anything in between) to inspire each other?
Last night I made a big spicy lentil...not sure what to call it! A spicy lentil daal, maybe. Made enough to last me a few days so I can get home in the evening and just heat some up. I'm a bit of an ad-lib cook and do things by taste so I don't have exact amounts (I tend to roughly estimate the calories in my home-cooked meals and estimate to the high end...not ideal, but it seems to work), but it was basically...
Gently fried (in coconut oil) red onions, garlic, 1 red chilli, carrots (about 8), red bell pepper, courgette. While they were cooking added spices to them: cumin, paprika, coriander powder, white pepper. Then added a few tablespoons of tomato puree, cooked a little longer, then threw in LOTS of red lentils (I'd estimate about 4 or 5 cups) and boiled water, covered and cooked for about 40 mins, stirring now and then and adding more water if it started to look dry (want it to be not watery but the end, so it's thick and substantial, just don't let it dry out and burn). A couple of pinches of salt to taste.
And then when it was ready I poached an egg super quick and served that on top Delicious and filling, and all good stuff!

that sounds so yummy
i usually shop for what is on sale, and then cook that. but i do the perimiter shop (only the outside perimeter and avoid the isles!), but i do go into the isles for things like canned beans and coconut water...and quinoa!
so i am really big on chicken (grilling, or butterflying and stuffing stuff in it [tomatos, spinach, onions, etc])
veggie burgers (you can use lettuce as a bun, take a head of lettuce and peel a layer and it makes a great wrap)
eggs (love eggs, friend, boiled, poached)
fruits (i make green smoothies at LEAST once a week, usually way more, and fruit ones)
spinach...i literally add spin to like, everything
i am pretty boring when it comes to cooking
i also buy really high quality flaxseed rye bread, i feel like it has such a minimul number of ingredients in it, and it really fills me up so i can get away with using just one slice and making a half sandwhich
hummus and mustard (i spread this stuff on everything if i need a spread)
zucchini
asparagus
beans
honestly, i can eat anything, but i mishmash my food and don't have too many great recipes
i am making a turkey meatloaf tonight and i will post my finished recipe!0 -
I love roasted vegetables - I'll take anything and sprinkle it with olive oil, salt and pepper and roast. I have to be careful not to overdo, though, as it's so delicious! Sometimes I add freshly grated parmesan cheese (always looking to up my calcium).
My latest favorites are low carb tortillas filled with meats and veggies. Yummy.0 -
Luxurious but healthy breakfast:
One slice of wholemeal eggy bread/french toast 'fried' without fat, topped with a dollop of half fat creme fraiche, sliced bananas, a handful of berries and a drizzle of maple syrup. Yum!0
