Scalloped potatoes with garlic and thyme

2 t olive oil
3 T garlic
2 T flour
2 1/2 c 2%milk
2 t Thyme
1 t salt
1/4 t pepper

2 lb potatoes peeled and sliced

1/2 c Romano

Preheat oven 375
In a medium pot on medium heat add oil and garlic and cook for 2 min stir occasionally. Then whisk in flour. Add seasonings and milk and cook on medium heat till it simmers.

Arrange 1/3 of the potatoes in a 9 x 13 pan and top with 1/3 of the sauce. Continue this 3 times. Cover with foil and bake for 30 min. Take the cover off and bake for another 30 min. Top with 1/2 of Romano cheese and bake another 15 min. Let cool for 10 min.

This is a delicious low calorie vegetarian meal. I serve it with a side of steamed broccoli. This makes (8) 1 cup servings
